Hamburger Stew

The trees are beginning to lose their leaves, the night air feels more like winter than fall. We have a simple and delicious hamburger stew to share with you. We think this weekend would be a perfect time to warm up to a bowl of this stew. Ingredients

  • 1 lb Lean ground hamburger
  • 1 Medium sweet onion – chopped
  • 2 Large Anaheim peppers – seeded and chopped
  • 3 Medium carrots – peeled and 1/4 “ sliced
  • 3 medium potatoes – peeled, quartered and cut each quarter into half
  • 1 Can corn
  • 2 Cups beef broth
  • 1 28oz can crushed tomatoes
  • ½ Cup rice
  • 2 Garlic cloves – fine chopped
  • 2 Tsp salt
  • 1 Tsp cracked black pepper
  • 1½ Tsp Chili powder
  • 1 Tsp Cumin
  • 2 Tsp Olive oil

Directions

In a 4Qt pan on medium heat add the olive oil; let it heat up. Add the chopped onions and Anaheim peppers; sauté until they are soften. Add the garlic and sauté for additional 3 minutes. Add the chili powder, cumin, 1½ Tsp salt and ½ Tsp pepper. Stir until well combined. Add the beef broth, crushed tomatoes, corn including the liquid and the rice. Put lid on with Redy-cook valve open; wait for valve to sound, close valve and turn heat to medium low and cook for 25 minutes.

In a 1.5 quart pan add 4Tbls of water; turn heat to medium high and add the potatoes and carrots. Put lid on with Redy-cook valve open; wait for valve to whistle and close valve.  Turn heat to medium low and cook an additional 12-15 minutes.

In the 10” skillet turn heat to medium, add the hamburger, ½ tsp salt, ½ Tsp black cracked pepper and cook until done. Smashing the hamburger with a fork while it cooks to make sure you get small pieces of ground beef. Drain off any fat.

Add the hamburger, potatoes and carrots to the rest of the ingredients. Replace lid at a tilt; turn heat to medium high and simmer for 10 minutes.
