Mashed Sweet Potatoes

Still haven’t completed your Thanksgiving4Two menu yet?  Be sure you add Dinner4Two’s delicious Mashed Sweet Potatoes to the list.  These are a must-have for every Thanksgiving table!

Culinary Tools:

  • Chef’s Knife
  • 2-Quart Saucepan
  • Junior Colander
  • 3-Quart Mixing Bowl
  • Round Slotted Masher

Ingredients:

  • 2/3 pounds sweet potatoes
  • 1/8 cup 2% milk
  • Salt and white pepper to taste

Procedure:

With the Chef’s Knife, peel the sweet potatoes and dice them into ½” thick cubes.

In the 2-quart Saucepan, add sweet potatoes and 1/8 cup water; cover with Redy-cook valve open.  Cook at medium-high temperature until the valve whistles (approximately 8 minutes), reduce temperature to low, close the valve and continue cooking for 20 minutes. 

Using the Junior Colander, rinse the sweet potatoes and place them in the 3-quart Mixing Bowl.  Add 1/8 cup milk onto the sweet potatoes.  Using the Masher, gently mash them until you get a puree.

Season with salt and pepper to taste.  Mix well.
